"ALLIGATOR PEAR This ten-year-old enterprise belongs to Abigail Chilton, who chose the company name, a nickname for avocado, because she wanted something distinctive along the lines of New York’s “Quilted Giraffe”.  Clients include the Academy of Motion Picture Arts and Sciences, University of Southern California and the University of California in Los Angeles. Buzz: The smallest details get attention from Chilton, whose hallmark is elegance. She orchestrates everything from the menu and the presentation (sit-down, buffet) to the lighting and the music.  Her hors d’oeuvres are addictive-not too rich, not too sweet.  Best Bites: Grilled shrimp on risotto galettes topped with roasted shallot cream: tequila-lime chicken on polenta squares with chipotle sauce: lamb tagine with fire-flamed red pepper couscous towers."
